Chicken Vindaloo
Vindaloo is a spicy, tangy Indian dish that originates from the state of Goa. Here is a recipe for making chicken vindaloo:
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1 teaspoon ground cayenne pepper
- 1 teaspoon garam masala
- 1/2 cup water
- 1/2 cup white vinegar
- 1/4 cup tomato paste
- 1/4 cup brown sugar
- 1 teaspoon salt
- Chopped fresh cilantro, for garnish
Instructions:
- Heat the oil in a large pan or wok over medium-high heat.
- Add the chicken and cook until it is no longer pink. Remove the chicken from the pan and set it aside.
- In the same pan, add the onion and garlic and cook until the onion is translucent.
- Add the cumin, coriander, turmeric, paprika, cayenne pepper, and garam masala and cook for an additional 1-2 minutes.
- Add the water, vinegar, tomato paste, brown sugar, and salt to the pan and stir to combine.
- Add the cooked chicken to the pan and toss to coat it with the sauce.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 20-30 minutes, until the sauce has thickened and the chicken is cooked through.
- Garnish with fresh cilantro and serve over rice or with naan bread.
