Chicken Chettinad

Ingredients:
- 500g chicken, cut into small pieces
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 teaspoon fennel seeds
- 1 large onion, finely chopped
- 4 cloves garlic, finely chopped
- 1 inch ginger, finely chopped
- 2 green chilies, finely chopped
- 1 cup tomato puree
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons coriander powder
- 2 tablespoons garam masala
- Salt, to taste
- Chopped fresh coriander leaves, for garnish
Instructions:
- Heat the oil in a large pan over medium heat. Add the mustard seeds, cumin seeds, cinnamon stick, green cardamom pods, cloves, and fennel seeds and cook until fragrant, about 1 minute.
- Add the onion, garlic, ginger, and green chilies and cook until the onion is soft and translucent, about 5 minutes.
- Add the tomato puree, turmeric, chili powder, coriander powder, and garam masala and cook for 2-3 minutes.
- Add the chicken and salt and cook for 5-7 minutes, until the chicken is cooked through.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
