Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons oil
1 medium onion, finely chopped
1 tablespoon garlic paste
1 tablespoon ginger paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground paprika
1 teaspoon garam masala
1/2 teaspoon chili powder (optional)
1 cup chicken broth
1 cup diced tomatoes
1/2 cup heavy cream
2 tablespoons tomato paste
Salt and pepper, to taste
Fresh cilantro, for garnish
Instructions:
Heat the oil in a large pan or wok over medium-high heat. Add the chicken and cook for 3-4 minutes, until lightly browned.
Add the onion, garlic paste, and ginger paste to the pan. Cook for an additional 2-3 minutes, until the onion is softened.
Add the cumin, coriander, turmeric, paprika, garam masala, and chili powder (if using). Cook for 1 minute, until fragrant.
Add the chicken broth, diced tomatoes, heavy cream, and tomato paste to the pan. Bring to a boil, then reduce heat to a simmer.
Simmer for 10-15 minutes, until the sauce has thickened and the chicken is cooked through.
Season with salt and pepper, to taste. Garnish with fresh cilantro before serving.
