Chicken Handi
Chicken Handi is a traditional Indian dish made with tender pieces of chicken simmered in a flavorful sauce made with a blend of aromatic spices. It is typically served with rice or roti and can be enjoyed as a main course. Here is a recipe you can try at home:
Ingredients:
- 1 lb boneless chicken breasts, cut into 1-inch piece
- 1 cup plain yogurt
- 1 tsp turmeric
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp mustard seeds
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt, to taste
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, finely minced
- 1 inch ginger, finely grated
- 1 cup water
- Chopped fresh cilantro, for garnish
Instructions:
- In a large bowl, mix together the yogurt, turmeric, red chili powder, garam masala, cumin seeds, coriander seeds, mustard seeds, cumin powder, coriander powder, and salt.
- Add the chicken pieces to the bowl and coat them evenly with the marinade. Cover the bowl with plastic wrap and marinate the chicken in the refrigerator for at least 2 hours or overnight.
- Heat the oil in a large pan or wok over medium heat. Add the onion, garlic, and ginger and fry until the onion is soft and translucent.
- Add the marinated chicken to the pan and cook for about 5 minutes, until it is browned on all sides.
- Add the water to the pan and bring the mixture to a boil. Reduce the heat to a simmer and cook the chicken for about 20-30 minutes, or until it is tender and cooked through.
- Garnish with fresh cilantro and serve hot with rice or roti. Enjoy!
